It happens (disease, accident, etc.). The only way to confirm is to check the death registers of the parish.

When looking at your initial post, I read the following:

• The lady Marie de NEGRE d'ABLES died on the 17th of January 1781 in Rennes-le-Château (Aude) (as you can find in the archives départementales) . refer https://archivesdepartementales.aude.fr/letat-civil

I looked in Geneanet from your source, and found the family tree of Philippe de Saint Etienne, direct descendant.

And I read the following about her daughter Marie d'HAUTPOUL, who died on the 21 octobre 1781, i.e. the same year, but in Versailles.
